Pie Recipe Preparation:
- Preheat oven to 375 degrees F (190 degrees C).
- Roll out half of the dough and line a 9-inch pie dish. Trim the excess dough, and set the pie dish aside.
- In a medium saucepan, melt butter over medium heat. Stir in flour, salt, and pepper until smooth.
- Gradually add chicken broth and Sherry, whisking constantly until the mixture comes to a boil.
- Reduce heat to low and simmer for 5 minutes, or until thickened. Remove from heat.
- Stir in chicken, onion, carrots, celery, and parsley. Pour the mixture into the prepared pie dish.
- Roll out the remaining dough and place over the filling. Trim the excess dough and flute the edges.
- Cut slits in top of crust to allow steam to escape. Brush the crust with egg wash.
- Bake for 30 minutes in the preheated oven, or until the crust is golden brown.
